Ingredients ( for four people ):
450 g penne Masseria Terra&Grano
160 g canned tuna in EVO oil
2 anchovies in oil
60 g pitted green olives
60 g cherry tomatoes
6 tablespoons concentrated tomato
1 pinch salt and pepper
1 clove of garlic
extra virgin olive oil to taste
oregano to taste

Put the water to boil for the pasta. Meanwhile, in a large frying pan, brown the whole garlic in a drizzle of extra virgin olive oil. Add the anchovies in oil and a few tablespoons of water to make them dissolve better. Immediately after, add the cherry tomatoes cut into 4 and the chopped olives. Also add the tomato concentrate and about half a glass of water to dilute it a pinch of salt and pepper, then add the tuna drained from the oil. Leave to cook for a couple of minutes, then turn off the heat. As soon as the pasta is al dente, drain and add the penne to the pan with the sauce. Stir and let it blend for a few seconds. Plate up and serve with a drizzle of extra oil virgin olive oil and a sprinkling of oregano.
